Bacon & Cheese Egg Bites
These fluffy, cheesy egg bites are perfect for breakfast, meal prep, or a quick snack. They’re easy to make and can be customized with your favorite toppings—think spinach, mushrooms, bell peppers, ham, etc!

Ingredients
12 large eggs
1 cup cottage cheese
Toppings of your choice (I used shredded cheddar cheese and bacon bites)
Salt and pepper to taste

Baking sheet (for water bath)
Instructions
Preheat oven: Set oven to 350°F (175°C).
Blend the eggs and cottage cheese: In a blender, combine eggs, cottage cheese, salt, and pepper until smooth and creamy.
Prepare molds: Place two silicone molds on your baking sheet. Add your desired mix of toppings.
Fill molds: Pour the blended egg mixture into the molds over the toppings. Sprinkle extra cheese or toppings on top if desired.
Set up a water bath: Place the baking sheet/silicone molds into the oven. Pour water into the pan until it reaches about halfway up the sides of the mold. You can also add the water in before placing in the oven (whichever is easiest for you!).
Bake: Bake at 350°F for 25-30 minutes, or until the egg bites are set and slightly golden on top.
Cool and remove: Let the egg bites cool for a few minutes, then remove from the molds. They pop right out! Enjoy!
