Sopa de Letras

This recipe takes me back to my childhood and now my son gets to enjoy it! Tip: for younger babies, you can blend the soup further to create a smoother texture.

Ingredients

  • 1 cup alphabet pasta (sopa de letras)

  • 2 Roma tomatoes

  • ¼ small onion

  • 1 garlic clove (or ¼ tsp garlic powder)

  • 1 small carrot, diced and steamed

  • 2 cups water (or homemade/low-sodium chicken broth)

  • 1–2 tsp olive oil

Instructions

  1. Toast the Pasta: In a medium pot, heat the olive oil over medium heat. Add the alphabet pasta and toast it, stirring frequently, until it turns a light golden brown.

  2. Prepare the Tomato Mixture: While the pasta is toasting, blend the Roma tomatoes, quarter of an onion, and garlic clove until smooth.

  3. Combine and Cook: Once the pasta is toasted, pour the blended tomato mixture into the pot. Stir well to coat the pasta.

  4. Add Liquid and Carrot: Pour in the water or chicken broth and your steamed carrot. Stir everything together.

  5. Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cook until the pasta is tender, about 15 minutes.

  6. Serve: Once the pasta is cooked and the flavors are well combined, remove from heat. Allow it to cool slightly before serving to your baby.
