Sopa de Letras
This recipe takes me back to my childhood and now my son gets to enjoy it! Tip: for younger babies, you can blend the soup further to create a smoother texture.
You can watch a short how-to video here.
Ingredients
1 cup alphabet pasta (sopa de letras)
2 Roma tomatoes
¼ small onion
1 garlic clove (or ¼ tsp garlic powder)
1 small carrot, diced and steamed
2 cups water (or homemade/low-sodium chicken broth)
1–2 tsp olive oil
Instructions
Toast the Pasta: In a medium pot, heat the olive oil over medium heat. Add the alphabet pasta and toast it, stirring frequently, until it turns a light golden brown.
Prepare the Tomato Mixture: While the pasta is toasting, blend the Roma tomatoes, quarter of an onion, and garlic clove until smooth.
Combine and Cook: Once the pasta is toasted, pour the blended tomato mixture into the pot. Stir well to coat the pasta.
Add Liquid and Carrot: Pour in the water or chicken broth and your steamed carrot. Stir everything together.
Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cook until the pasta is tender, about 15 minutes.
Serve: Once the pasta is cooked and the flavors are well combined, remove from heat. Allow it to cool slightly before serving to your baby.
